Plenty To Eat - National Vegetarian Week

This week is National Vegetarian Week so we headed to our favourite restaurant, Ottolenghi in Islington to get some uncomplicated, unadulterated veggie food.  

Yotam Ottolenghi’s food inspiration comes from his Mediterranean background and his unapologetic love of ingredients. Not a vegetarian himself, his approach to vegetable dishes is wholly original and innovative, based on strong flavours and stunning, fresh combinations.

Eager to recreate the scrummy salad we feasted on, we recommend Yotam Ottolenghi’s cook book Plenty, a collection of recipes - many of which have appeared in different forms in Yotam’s New Vegetarian column in the Guardian's Weekend magazine. All the recipes are true to the Ottolenghi ethos: vibrant, daring and highly original.

With sections devoted to cooking greens, aubergines, brassicas, rice and cereals, pasta and couscous, pulses, roots, squashes, onions, fruit, mushrooms and tomatoes, the breadth of colours, tastes and textures is extraordinary.

Our favourite recipe is the multi-vegetable paella which we will be feasting on this weekend whilst enjoying the warm sunny weather and a glass of vino.
